Homemade Healthy Chocolate Recipe

We moved in to our new house today so didn’t have much time for Easter festivities. However we ate homemade chocolate for dinner! I first started making chocolate in my Thermomix when I came across Jo Whitton’s Quirky Cooking homemade chocolate blog post a few years ago- highly recommend the Quirky Cooking blog! This is my version of Caramel Chocolate- it is healthy too! If my kids are going to be eating chocolate I would rather they get some nutritious benefit from it! Where possible I buy Fair Trade cacao/cocoa/chocolate products so I know farmers in the third world are paid a fair price for their work and to ensure there is no forced or child labour in the production line.

Ingredients:

Caramel Ingredients:

100g roasted, salted peanuts

200g pure maple syrup

150g dried dates

15g vanilla essence

Chocolate Ingredients:

175g pure maple syrup

175g raw cacao butter (from Health Food store)

30g raw cacao powder (from Health Food store)

Extra 70g roasted, salted peanuts, chopped

  1. Line a slice tray with baking paper.

  2. Blitz all ingredients for caramel in Thermomix on speed 10 for 1 minute. Set aside.

  3. Wash and dry Thermomix bowl thoroughly. Blitz cacao butter in Thermomix on speed 5 for 10 seconds until it is very small pieces.

  4. To make the chocolate, melt cacao butter on 37 degrees, speed 3 for 10 minutes or until cacao butter is all melted.

  5. Add maple syrup and cacao powder to melted cacao butter. Blend together on 37 degrees, speed 3 for 10 minutes.

  6. Working quickly, pour 1/3 of the chocolate mixture in to the bottom of slice tray.

  7. Add caramel mixture on top of chocolate mixture and spread evenly.

  8. Sprinkle extra peanuts on top of caramel.

  9. Pour remaining chocolate mixture on top.

  10. Freeze immediately to set. I have left this out at room temperature before and the maple syrup separates from the rest of the chocolate mixture. So make sure you work quickly with the chocolate and put the whole thing in the freezer ASAP!

  11. Once set, chop in to pieces, eat and enjoy! When I was cutting this up, it was similar to chopping up a Caramello Koala and caramel did come out of the sides a little bit.

So there you have homemade, healthy chocolate! Super easy and delicious! My kids LOVED it and were happy to hear it was healthy for them too! Happy Easter!
